Pepper from Fresno-Benavente
With a pleasant flavour and silhouette marked by a sharply curved peak, the chick pea from Fuentesaúco is produced in 21 municipalities in the southeast of the province, in the region of Guareña. Fuentesaúco is its capital.
It is grown in well-drained, sandy or sandy loam soils with a slightly acidic pH and low or medium levels of absorbable calcium. This legume, protected by a Protected Geographic Indication (IGP)is stored, packaged and occasionally prepared in the same production area, which expands south to include the region of La Armuña given the strong ties between the two regions. The cooked chick pea has a buttery and slightly granular body with a particularly soft skin.
They may only be found in markets that have the Regulating Council guarantee of origin for dried chick peas that have been packaged and precooked or cooked in processing industries that have passed all process controls.
