Chorizo
Zamoran chorizo, one of the more typical sausages of Castilla y León, is a cured meat whose history is linked to the eating habits and activities of meat producers in the province of Zamora.
La Asociación Zamoranade Elaboradores de Chorizo (AZECHO), a group of twenty chorizo makers, with the support of the Instituto Tecnológico Agrario de Castilla y León and la Diputación Provincial de Zamora, has developed the the Marca de Garantía Chorizo Zamorano project, which recognizes and promotes the culinary value of this typical sausage of Zamora, produced with professionalism and traditional know-how.
The geographic area delimited for the production and preparation of Chorizo Zamorano corresponds to all the municipalities in the province of Zamora, and includes the regions of Toro, Aliste, Benavente, la Carballeda, la Guareña, Sanabria, Sayago, Tábara, Tierra de Alba, Tierra de Campos, Tierra del Pan and Tierra del Vino.
