La renaissance de cette \u00ab\u00a0r\u00e9volution mycologique\u00a0\u00bb est le fruit de l&rsquo;activit\u00e9 d&rsquo;amateurs de champignons, d&rsquo;associations, de mycologues, de chefs d&rsquo;entreprises de transformation et de cuisiniers engag\u00e9s.<\/p>\n<p>La plus forte concentration de champignons est enregistr\u00e9e dans les cantons de Sayago et d&rsquo;Aliste, o\u00f9 jusqu&rsquo;\u00e0 un million de kilos de produits sont r\u00e9colt\u00e9s les bonnes saisons. La valorisation de cette ressource foresti\u00e8re de premier ordre a favoris\u00e9 l&rsquo;implantation de nombreuses industries de transformation.
