C&rsquo;est pour cette raison que les agneaux de lait de Zamora deviennent un produit embl\u00e9matique, surtout lorsqu&rsquo;ils sont prot\u00e9g\u00e9s par un sceau de qualit\u00e9.<\/p>\n<p><strong>Prot\u00e9g\u00e9 par une indication g\u00e9ographique prot\u00e9g\u00e9e, el Lechazo de Castilla y Le\u00f3n&nbsp;<\/strong>(l&rsquo;agneau de lait de Castille-et-Le\u00f3n) reconnu en 1997, provient des races locales churra, castellana et ojalada, dont les troupeaux \u00e9maillent le paysage d&rsquo;un bout \u00e0 l&rsquo;autre de la province de Zamora.<\/p>\n<p>La bonne viande ovine et son go\u00fbt particuliers sont traditionnellement li\u00e9s \u00e0 l&rsquo;alimentation et au r\u00e9gime alimentaire, \u00e0 base de chaumes c\u00e9r\u00e9ali\u00e8res et de p\u00e2turage naturel. Le terme veau \u00ab\u00a0de lait\u00a0\u00bb fait r\u00e9f\u00e9rence au fait que ces ovins sont uniquement nourris au lait maternel.
