Das Wiederaufleben dieser \u2018mykologischen Revolution\u2019 ist das Ergebnis der Aktivit\u00e4t von Pilzliebhabern, Vereinigungen, Mykologen verarbeitenden Betrieben und engagierten K\u00f6chen.<\/p>\n<p>Die gr\u00f6\u00dfte Konzentration von Pilzen findet sich in den Bezirken Sayago und Aliste, wo in einer guten Saison eine Million Kilogramm Pilze gepfl\u00fcckt werden. Die Nutzung dieser Waldressource erster Ordnung hat die Entstehung von zahlreichen verarbeitenden Betrieben beg\u00fcnstigt.
